  • 2 cups mixed greens

  • 1/2 cucumber, sliced
  • 2 small tomatoes, chopped
  • 1/2 red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine mixed greens, chopped herbs, cucumber, tomatoes, and red onion.

  2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

  3. Pour the dressing over the salad and toss to combine.

  4. Serve immediately.
