How To Make African Yam and Peanut Soup
A hearty soup made with yam and peanut butter, seasoned with African spices.
Serves:
Ingredients
- 1 large onion, diced
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp smoked paprika
- ½ tsp cayenne pepper
- 2 medium yams, chopped
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 cup creamy peanut butter
- Salt and pepper to taste
- Cilantro, for garnish
Instructions

In a large pot, sauté the onion, garlic, and ginger until soft.

Add the spices and yams, and sauté for 2 minutes.

Pour in the vegetable broth and diced tomatoes, and bring to a boil.

Reduce heat and let simmer until the yams are cooked, about 30 minutes.

Stir in the creamy peanut butter until smooth.

Season with salt and pepper to taste.

Serve hot, garnished with cilantro.
