African Groundnut Soup Recipe

How To Make African Groundnut Soup

Ingredients

  • 2 cups of chopped mixed vegetables (onions, carrots, bell peppers, tomatoes)
  • 1 cup of groundnuts
  • 4 cups of vegetable stock
  • 1 tbsp of grated ginger
  • 1 tsp of garlic powder
  • 1 tsp of smoked paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the mixed vegetables until soft.

  2. Add in the groundnuts and cook for 5 minutes.

  3. Pour in the vegetable stock and bring to a boil.

  4. Reduce heat and simmer for 1 hour.

  5. Stir in the grated ginger, garlic powder, smoked paprika, salt, and pepper.

  6. Blend the soup until smooth.

  7. Serve hot with a sprinkle of chopped nuts.
