How To Make African Mushroom Soup Recipe
A rich and flavorful soup made with earthy mushrooms and African-inspired spices.
Serves:
Ingredients
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp smoked paprika
- 1/2 tsp turmeric
- 4 cups chicken or vegetable broth
- 1 lb mushrooms, sliced
- 1/2 cup coconut milk
- Salt and pepper to taste
- Fresh cilantro, chopped (optional)
Instructions

In a large pot, sauté onion and garlic in olive oil until soft and translucent.

Add cumin, coriander, paprika, and turmeric and cook for 1-2 minutes until fragrant.

Add broth and mushrooms and bring to a boil. Reduce heat and simmer for 30 minutes.

Add coconut milk and blend soup until smooth. If soup is too thick, add more broth or water.

Season with salt and pepper to taste. Garnish with fresh cilantro.
