Ingredients

  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tsp cumin
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 4 cups vegetable broth
  • 1 lb fresh spinach, trimmed and roughly chopped
  • 1/2 cup crumbled feta cheese
  • Salt and pepper, to taste

Instructions

  1. Heat the olive oil in a large pot over medium-high heat.

  2. Add the onion and garlic and sauté until softened.

  3. Add the cumin, cinnamon, and cayenne pepper and cook for 1 minute.

  4. Pour in the vegetable broth and bring to a boil.

  5. Add the spinach and simmer until wilted, about 5 minutes.

  6. Using an immersion blender or a regular blender, puree the soup until smooth.

  7. Stir in the feta cheese until melted and season with salt and pepper to taste.

  8. Ladle the soup into bowls and serve hot.
