How To Make African Spinach and Feta Soup
This hearty soup is bursting with the flavors of Africa, featuring nutrient-packed spinach and tangy feta cheese.

Ingredients
- 2 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1/4 tsp cayenne pepper
- 4 cups vegetable broth
- 1 lb fresh spinach, trimmed and roughly chopped
- 1/2 cup crumbled feta cheese
- Salt and pepper, to taste
Instructions

Heat the olive oil in a large pot over medium-high heat.

Add the onion and garlic and sauté until softened.

Add the cumin, cinnamon, and cayenne pepper and cook for 1 minute.

Pour in the vegetable broth and bring to a boil.

Add the spinach and simmer until wilted, about 5 minutes.

Using an immersion blender or a regular blender, puree the soup until smooth.

Stir in the feta cheese until melted and season with salt and pepper to taste.
