African Chicken and Rice Soup Recipe

How To Make African Chicken and Rice Soup

A warm and hearty soup with tender chicken and nutty rice, infused with African spices.

Ingredients

  • 4 chicken legs, skin on
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp cinnamon
  • 4 cups chicken broth
  • 1 cup long-grain rice
  • Salt and pepper to taste
  • Fresh cilantro, chopped for garnish

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chicken legs and cook until browned, about 5 minutes on each side. Remove chicken from the pot and set aside.

  2. Add onions, garlic, ginger, and spices to the pot. Cook for 2-3 minutes until onions are translucent.

  3. Add chicken broth to the pot, bring to a boil, and then reduce heat to a simmer.

  4. Add in rice and stir. Return the chicken legs to the pot, cover, and cook for 30-35 minutes until rice is cooked and chicken is tender.

  5. Season with salt and pepper to taste. Serve hot, garnished with chopped cilantro.
