How To Make African Chicken and Rice Soup
A warm and hearty soup with tender chicken and nutty rice, infused with African spices.
Serves:
Ingredients
- 4 chicken legs, skin on
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp ginger, grated
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp paprika
- 1/2 tsp cinnamon
- 4 cups chicken broth
- 1 cup long-grain rice
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish
Instructions

In a large pot, heat olive oil over medium heat. Add chicken legs and cook until browned, about 5 minutes on each side. Remove chicken from the pot and set aside.

Add onions, garlic, ginger, and spices to the pot. Cook for 2-3 minutes until onions are translucent.

Add chicken broth to the pot, bring to a boil, and then reduce heat to a simmer.

Add in rice and stir. Return the chicken legs to the pot, cover, and cook for 30-35 minutes until rice is cooked and chicken is tender.

Season with salt and pepper to taste. Serve hot, garnished with chopped cilantro.
