How To Make The Ritz-Carlton’s Lobster Bisque Recipe

A creamy and rich soup with chunks of succulent lobster meat.

Serves:

Ingredients

  • 2 lobster tails, cooked and chopped
  • 2 tbsp unsalted butter
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp tomato paste
  • 4 tbsp all-purpose flour
  • 4 cups chicken stock
  • 1 cup heavy cream
  • Salt and pepper, to taste
  • Chives, chopped for garnish

Instructions

  1. Melt butter in a saucepan over medium-high heat, add onions and garlic and cook for 5 minutes or until softened.

  2. Add the tomato paste and flour and cook for another 2 minutes, stirring constantly.

  3. Slowly whisk in the chicken stock and bring to a boil.

  4. Reduce heat and simmer for 20 minutes.

  5. Add in the chopped lobster meat and heavy cream and cook for another 5 minutes.

  6. Use an immersion blender to puree the soup until smooth.

  7. Season with salt and pepper to taste.

  8. Garnish with chopped chives and serve hot.
