Ingredients

  • 1/3 cup sugar
  • 1/4 cup flour
  • 1/4 cup cocoa powder
  • 1/4 cup butter
  • 1 and 1/2 cups whole milk
  • 4 egg yolks
  • 1 tsp vanilla extract
  • 4 egg whites
  • 1/4 cup sugar
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 375°F.

  2. In a medium saucepan, combine 1/3 cup sugar, flour, cocoa powder, and butter. Cook over medium heat, stirring constantly, until mixture is well-combined and smooth.

  3. Gradually stir in milk and continue cooking until mixture is thick and bubbly.

  4. Beat egg yolks in a small bowl and gradually stir in chocolate mixture.

  5. Stir in vanilla.

  6. In a separate, large mixing bowl, beat egg whites until soft peaks form. Gradually add in 1/4 cup sugar and continue to beat until stiff peaks form.

  7. Gently fold chocolate mixture into egg whites.

  8. Spoon mixture into four greased souffle dishes.

  9. Bake for 12-15 minutes or until puffed and set.

  10. Serve immediately, dusted with powdered sugar.
