How To Make The Ritz-Carlton’s Chocolate Souffle Recipe

Ingredients
- 1/3 cup sugar
- 1/4 cup flour
- 1/4 cup cocoa powder
- 1/4 cup butter
- 1 and 1/2 cups whole milk
- 4 egg yolks
- 1 tsp vanilla extract
- 4 egg whites
- 1/4 cup sugar
- Powdered sugar for dusting
Instructions

Preheat oven to 375°F.

In a medium saucepan, combine 1/3 cup sugar, flour, cocoa powder, and butter. Cook over medium heat, stirring constantly, until mixture is well-combined and smooth.

Gradually stir in milk and continue cooking until mixture is thick and bubbly.

Beat egg yolks in a small bowl and gradually stir in chocolate mixture.

Stir in vanilla.

In a separate, large mixing bowl, beat egg whites until soft peaks form. Gradually add in 1/4 cup sugar and continue to beat until stiff peaks form.

Gently fold chocolate mixture into egg whites.

Spoon mixture into four greased souffle dishes.

Bake for 12-15 minutes or until puffed and set.
