How To Make The Ritz-Carlton’s Beef Wellington Recipe

A classic dish made from tender beef filets wrapped in puff pastry and baked to perfection, served with roasted vegetables.

Serves:

Ingredients

  • 4 beef filets, 6 oz each
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 shallots, minced
  • 2 cloves garlic, minced
  • 6 oz mushrooms, finely chopped
  • 2 tbsp brandy
  • 1 sheet puff pastry, thawed
  • 1 egg
  • Salt and pepper

Instructions

  1. Preheat oven to 400°F.

  2. Season beef filets with salt and pepper. Heat olive oil in a skillet over high heat and sear the beef for 1-2 minutes on each side. Remove from skillet and set aside.

  3. Add butter to the skillet and sauté shallots and garlic until softened.

  4. Add mushrooms and cook until they release moisture and are lightly browned. Season with salt and pepper.

  5. Pour brandy over the mushrooms and stir until evaporated. Remove from heat and let cool.

  6. Roll out puff pastry on a floured surface and cut into four equal pieces.

  7. Spread mushroom mixture over one side of the beef filets and place on the pastry.

  8. Fold pastry over beef and seal edges with beaten egg. Place on a baking sheet.

  9. Brush the pastry with egg wash and bake in the oven for 25-30 minutes, until golden brown.

  10. Let rest for 5 minutes before serving with roasted vegetables.
