How To Make The Ritz-Carlton’s Truffle Risotto Recipe
A luxurious and indulgent risotto infused with the rich, earthy flavor of truffles.
Serves:
Ingredients
- 6 cups of chicken stock
- 2 tbsp of olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 1/2 cups of Arborio rice
- 1/2 cup of dry white wine
- 1/2 cup of grated Parmesan cheese
- 2 tbsp of butter
- 1/4 cup of truffle oil
- Salt and pepper, to taste
Instructions

Heat the chicken stock in a saucepan and keep it warm.

In a large pan, heat the olive oil over medium heat. Add the onion and garlic and cook until softened.

Add the Arborio rice and stir to coat it with the oil. Cook for 2-3 minutes, until the rice is lightly toasted.

Add the white wine and stir until it is absorbed by the rice.

Ladle in one cup of the warm chicken stock and stir, allowing the rice to absorb the liquid before adding in another ladleful.

Continue adding the chicken stock and stirring until the rice is creamy and tender, about 18-20 minutes.

Stir in the Parmesan cheese, butter, and truffle oil until the cheese and butter are melted and the risotto is creamy.

Season with salt and pepper to taste.

Serve hot with additional grated Parmesan cheese, if desired.
