Ingredients

  • 1 tbsp coconut oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 2 tsp curry powder
  • 1 tsp turmeric powder
  • 1 tbsp tomato paste
  • 1 can coconut milk
  • 2 cups vegetable broth
  • 2 sweet potatoes, peeled and chopped
  • 2 carrots, chopped
  • 1 red bell pepper, chopped
  • 1 cup frozen peas
  • Salt and pepper to taste

Instructions

  1. Heat coconut oil in a large pot over medium heat.

  2. Add onion, garlic, and ginger; sauté until soft.

  3. Add curry and turmeric powder, stir for 1 minute.

  4. Add tomato paste, coconut milk, and vegetable broth.

  5. Add sweet potatoes and carrots, let the mixture simmer for 20 minutes.

  6. Add red bell pepper and frozen peas, let it cook for 10 minutes or until vegetables are tender.

  7. Season with salt and pepper to taste.
