How To Make Copycat Subway Raspberry Cheesecake Cookie Recipe

A soft and chewy cookie loaded with tart raspberry bites and a creamy cheesecake center.

Ingredients

  • 1/2 cup unsalted butter, at room temperature
  • 1/2 cup white sugar
  • 1 egg
  • 1/2 tablespoon pure vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1/2 cup fresh raspberries
  • 4 ounces cream cheese, softened

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.

  2. In a large bowl, cream the butter and sugar together until light and fluffy using an electric mixer.

  3. Beat in the egg and vanilla extract until well combined.

  4. Sift in the baking soda, salt, and flour and mix until just combined.

  5. Fold in the fresh raspberries.

  6. In a separate bowl, mix the softened cream cheese until smooth.

  7. Roll the cookie dough into balls and then flatten slightly in your palms.

  8. Add a small dollop of cream cheese to the center of each cookie.

  9. Fold the edges of the dough up and around the cream cheese to seal it inside.

  10. Bake in the preheated oven for 10-12 minutes until set and lightly golden brown.

  11. Allow to cool on the baking sheet for a few minutes then transfer to a wire rack to cool completely.
