A hearty stew with beans, veggies, and tender chicken in a spicy broth that’s perfect for cold days.

Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 garlic cloves, minced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 jalapeño pepper, diced
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried oregano
- 1/2 teaspoon salt
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can diced tomatoes
- 2 cups chicken broth
- 2 cups cooked shredded chicken
- Lime wedges, chopped cilantro, and sliced avocado for serving
Instructions

Heat olive oil in a large pot over medium-high heat. Add onion and garlic and sauté until softened, about 3-4 minutes.

Add the diced peppers and jalapeño and sauté until slightly softened, about 5 minutes.

Add the chili powder, cumin, smoked paprika, oregano, and salt, and sauté until fragrant, about 1 minute.

Add the black beans, kidney beans, diced tomatoes, and chicken broth and bring to a boil.

Reduce heat and simmer for 20 minutes, stirring occasionally.

Add the cooked shredded chicken and simmer for an additional 10-15 minutes.

Serve garnished with lime wedges, chopped cilantro, and sliced avocado.
