How To Make Qdoba Mexican Gumbo Recipe

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 jalapeño pepper, diced
  • 1 tablespoon chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can diced tomatoes
  • 2 cups chicken broth
  • 2 cups cooked shredded chicken
  • Lime wedges, chopped cilantro, and sliced avocado for serving

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Add onion and garlic and sauté until softened, about 3-4 minutes.

  2. Add the diced peppers and jalapeño and sauté until slightly softened, about 5 minutes.

  3. Add the chili powder, cumin, smoked paprika, oregano, and salt, and sauté until fragrant, about 1 minute.

  4. Add the black beans, kidney beans, diced tomatoes, and chicken broth and bring to a boil.

  5. Reduce heat and simmer for 20 minutes, stirring occasionally.

  6. Add the cooked shredded chicken and simmer for an additional 10-15 minutes.

  7. Serve garnished with lime wedges, chopped cilantro, and sliced avocado.
