How To Make Grilled Pollo Loco Bowl Recipe
A mouth-watering bowl filled with juicy marinated chicken, fresh veggies, and tangy salsa, perfect for summertime grilling!

Ingredients
- 4 boneless chicken breasts
- 1/4 cup olive oil
- 1/4 cup lime juice
- 2 garlic cloves, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/4 tsp paprika
- Salt and pepper, to taste
- 1 cup cooked corn
- 1 cup cooked black beans
- 1 avocado, sliced
- 1 red onion, diced
- 1/2 cup chopped cilantro
- 1/4 cup diced jalapenos
- 1/4 cup salsa
- 2 cups cooked white rice
Instructions

In a bowl, whisk together olive oil, lime juice, minced garlic, cumin, chili powder, paprika, salt and pepper.

Add chicken breasts to marinade, making sure they are completely coated. Marinate for at least 30 minutes in the fridge.

Heat up grill to medium-high heat. Grill chicken for 6-7 minutes on each side, or until cooked through.

In a separate bowl, mix together cooked corn, black beans, diced avocado, diced red onion, chopped cilantro, diced jalapenos, and salsa.

To assemble bowls, divide cooked white rice evenly between four bowls. Add grilled chicken, and top with the veggie and salsa mixture.
