How To Make Mimi’s Cafe’s French Onion Soup
A classic French onion soup with rich caramelized onions, savory broth, and a layer of melted cheese.

Ingredients
- 3 large onions, thinly sliced
- 2 tbsp unsalted butter
- 1 tbsp all-purpose flour
- 1/2 cup dry red wine
- 6 cups beef broth
- 1/4 tsp dried thyme
- Salt and black pepper, to taste
- 4 slices French bread
- 1 cup shredded Gruyere cheese
Instructions

In a large pot, melt the butter over medium heat. Add the onions and stir to coat with the butter. Cook for 15 minutes or until the onions are caramelized and softened.

Add the flour and stir well to combine. Cook for 2 minutes.

Pour in the wine and scrape the bottom of the pot to release any browned bits. Cook until the wine is almost evaporated, about 5 minutes.

Add the beef broth, thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 30 minutes.

Preheat the broiler. Ladle the soup into four ovenproof bowls. Top each bowl with a slice of French bread and a handful of Gruyere cheese.

Broil the bowls until the cheese is melted and bubbly, about 2-3 minutes. Serve immediately.
