A light and healthy alternative to pasta, these zucchini noodles are tossed with a flavorful garlic and lemon dressing.

Ingredients

  • 4 medium zucchini, spiralized
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp lemon juice
  • Salt and pepper, to taste
  • Shaved parmesan cheese, for garnish

Instructions

  1. Spiralize zucchini into noodles.

  2. Heat olive oil in a large skillet over medium-high heat.

  3. Add garlic and sauté for 30 seconds.

  4. Add zucchini noodles to the skillet and sauté for 2-3 minutes, until tender but still crisp.

  5. In a small bowl, whisk together lemon juice, salt, and pepper.

  6. Remove skillet from heat and toss zucchini noodles with dressing, basil, and parsley.

  7. Divide between plates and garnish with shaved parmesan cheese.
