Ingredients

  • 8 egg whites
  • 1 tbsp olive oil
  • ⅓ cup diced onion
  • ¼ cup diced bell pepper
  • ¼ cup diced tomato
  • ¼ cup diced mushrooms
  • Salt and pepper to taste
  • 4 slices of whole wheat toast
  • Chopped parsley for garnish

Instructions

  1. Heat the olive oil in a large non-stick skillet over medium-high heat.

  2. Add the diced onion, bell pepper, and mushrooms to the skillet and sauté for 2-3 minutes until softened.

  3. Add the diced tomato and sauté for another minute.

  4. In a bowl, whisk the egg whites until frothy and season with salt and pepper.

  5. Pour the egg whites into the skillet with the vegetables and lower the heat to medium.

  6. Use a spatula to scramble the eggs and vegetables together.

  7. Cook until the eggs are set and no longer runny, about 3-4 minutes.

  8. Serve the egg white scramble hot with a side of whole wheat toast and garnish with chopped parsley.
