How To Make Le Peep’s Breakfast Burrito

A hearty breakfast burrito packed with eggs, vegetables, cheese, and your choice of meat.

Ingredients

  • 8 large eggs
  • 1 tbsp vegetable oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup diced tomato
  • 1/2 cup cooked and chopped bacon or sausage (optional)
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup shredded cheddar cheese
  • 4 large flour tortillas

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.

  2. Add onion, bell pepper, and tomato. Cook for 3-5 minutes, until vegetables are tender.

  3. In a separate bowl, beat eggs together with salt and black pepper.

  4. Pour eggs into skillet with vegetables and scramble until cooked through.

  5. Add cooked bacon or sausage (if using) and stir into egg mixture.

  6. To assemble burritos, divide egg mixture into fourths and place on top of each flour tortilla.

  7. Sprinkle each burrito with shredded cheddar cheese.

  8. Fold ends of tortilla in and roll tightly to form burrito.

  9. Serve hot.
