Classic Denver omelette with diced ham, onions, bell peppers, and cheese.

Ingredients

  • 8 large eggs
  • 1/2 cup diced ham
  • 1/4 cup diced onions
  • 1/4 cup diced green bell peppers
  • 1/4 cup shredded cheddar cheese
  • 1/4 cup whole milk
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons unsalted butter

Instructions

  1. In a large bowl, whisk together eggs and milk.

  2. Add the diced ham, onions, bell peppers, salt, and pepper. Mix everything together.

  3. Heat a non-stick skillet over medium heat. Melt 1 tablespoon of butter in the skillet. Once melted, pour in half the egg mixture. Cook for 2-3 minutes or until the edges start to set. Sprinkle half of the cheese on top of the omelette.

  4. Use a spatula to fold the omelette in half, then gently slide it onto a plate.

  5. Repeat with the remaining egg mixture and cheese.
