A hearty breakfast skillet with spicy southwest flavors and plenty of protein.

Ingredients
- 1 lb ground chorizo
- 1/2 cup diced red onion
- 1/2 cup diced bell pepper
- 1/2 cup diced tomato
- 1/2 cup black beans
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- Salt and pepper to taste
Instructions

In a large skillet, cook the chorizo over medium heat until browned and cooked through.

Add the onion, bell pepper, and tomato to the skillet. Cook for 5 minutes, stirring occasionally.

Add the black beans and continue cooking for 2-3 minutes.

Crack the eggs into the skillet and stir to mix with the other ingredients.

Cover the skillet and cook until the eggs are cooked through, about 5-7 minutes.

Sprinkle cheese and cilantro over the top of the skillet and season with salt and pepper to taste.
