Ingredients

  • 1 lb ground chorizo
  • 1/2 cup diced red onion
  • 1/2 cup diced bell pepper
  • 1/2 cup diced tomato
  • 1/2 cup black beans
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste

Instructions

  1. In a large skillet, cook the chorizo over medium heat until browned and cooked through.

  2. Add the onion, bell pepper, and tomato to the skillet. Cook for 5 minutes, stirring occasionally.

  3. Add the black beans and continue cooking for 2-3 minutes.

  4. Crack the eggs into the skillet and stir to mix with the other ingredients.

  5. Cover the skillet and cook until the eggs are cooked through, about 5-7 minutes.

  6. Sprinkle cheese and cilantro over the top of the skillet and season with salt and pepper to taste.
