How To Make Le Peep’s Greek Yogurt Pancakes Recipe
Thick and fluffy pancakes made with tangy Greek yogurt served with syrup and whipped butter.

Ingredients
- 1 1/2 cups of all-purpose flour
- 2 tbsp of sugar
- 1 tsp of baking powder
- 1/2 tsp of baking soda
- 1/2 tsp of salt
- 1 cup of plain Greek yogurt
- 1/2 cup of milk
- 2 eggs
- 1 tsp of vanilla extract
- Butter or cooking spray for the griddle
Instructions

In a large bowl, whisk together the flour, sugar, baking powder, baking soda and salt.

In a separate bowl, mix together the Greek yogurt, milk, eggs, and vanilla extract until fully combined.

Add the wet mixture into the dry mixture and stir until just combined, being careful not to overmix.

Preheat a griddle or non-stick pan over medium heat and melt some butter or use cooking spray.

Pour 1/4 cup of the batter onto the griddle for each pancake. Cook for 2-3 minutes or until bubbles form on the surface and the edges begin to dry. Flip the pancake and cook for an additional 1-2 minutes or until golden brown. Repeat with remaining batter.

Serve hot with syrup and whipped butter.
