How To Make Lainy’s Bibingka Recipe
A traditional Filipino cake made with rice flour and coconut milk, topped with salted egg and cheese.

Ingredients
- 1 cup rice flour
- 1/2 cup sugar
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 cup coconut milk
- 2 eggs
- 1/4 cup butter, melted
- 4 salted eggs, sliced
- 1/2 cup cheese, grated
Instructions

Preheat oven to 375°F.

In a large bowl, combine rice flour, sugar, baking powder, and salt.

In a separate bowl, whisk together coconut milk, eggs, and melted butter.

Add wet ingredients to dry ingredients and mix until smooth.

Pour batter into a greased 8-inch round cake pan.

Top with sliced salted eggs and grated cheese.

Bake for 45 minutes or until cake is cooked through.
