Ingredients
- 1/2 cup popcorn kernels
- 1 cup brown sugar
- 1/2 cup unsalted butter
- 1/4 cup corn syrup
- 1/2 tsp salt
- 1/2 tsp baking soda
- 1 tsp vanilla extract
Instructions

Preheat oven to 250°F.

Pop popcorn kernels using preferred method.

In a medium saucepan over medium heat, combine brown sugar, butter, corn syrup, and salt. Stir until mixture comes to a boil.

Reduce heat to low and simmer for 5 minutes, stirring occasionally.

Remove from heat and whisk in baking soda and vanilla extract until mixture is light and frothy.

Pour caramel sauce over popped popcorn and mix until popcorn is evenly coated.

Spread popcorn onto a baking sheet lined with parchment paper and bake for 15-20 minutes, stirring every 5 minutes to ensure even baking.
