How To Make Furr’s Cafeteria’s Banana Pudding

A classic Southern dessert with layers of vanilla wafers, fresh bananas, and a creamy vanilla pudding.

Cooking: 15 minutes
Total: 35 minutes + chilling time

Serves:

Ingredients

  • 1 cup of sugar
  • 1/3 cup of all-purpose flour
  • 1/4 tsp of salt
  • 3 cups of whole milk
  • 3 egg yolks, beaten
  • 1 tsp of vanilla extract
  • 3 ripe bananas, sliced
  • 1 1/2 cups of vanilla wafers

Instructions

  1. In a saucepan, whisk together the sugar, flour, and salt until combined.

  2. Gradually stir in the milk until smooth.

  3. Cook over medium heat, stirring constantly, until mixture thickens and boils.

  4. Boil for one minute, then remove from heat.

  5. Stir a small amount of the hot mixture into the egg yolks, then return mixture to the saucepan.

  6. Cook for an additional two minutes, stirring constantly.

  7. Remove from heat and stir in the vanilla extract.

  8. In a large bowl, layer the banana slices and vanilla wafers.

  9. Pour the pudding over the top and smooth out.

  10. Chill in the refrigerator for at least two hours before serving.
