Ingredients

  • 1 cup of yellow cornmeal
  • 1 cup of all-purpose flour
  • 1/4 cup of sugar
  • 1 tbsp of baking powder
  • 1/2 tsp of baking soda
  • 1/2 tsp of salt
  • 2 large eggs
  • 1/4 cup of vegetable oil
  • 1/4 cup of honey
  • 1 cup of buttermilk

Instructions

  1. Preheat oven to 400°F. Grease a 9-inch cast-iron skillet or baking dish.

  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, baking soda, and salt.

  3. In another bowl, whisk together eggs, oil, honey, and buttermilk.

  4. Add the wet mixture to the dry mixture and stir until combined.

  5. Pour the batter into the prepared skillet or baking dish, and bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

  6. Let it cool for 5 minutes before slicing and serving.
