Ingredients

  • 3 medium yellow squash, sliced
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup diced onion
  • 1/4 cup chopped green bell pepper
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 350°F.

  2. Steam the sliced squash until just tender, about 5 minutes.

  3. In a large bowl, mix together mayonnaise, sour cream, Parmesan cheese, cheddar cheese, onion, green bell pepper, garlic powder, salt, and pepper.

  4. Gently fold in the steamed squash until coated with the mixture.

  5. Transfer to a 9×9 inch square baking dish and bake for 35-40 minutes or until the top is golden brown.
