How To Make Freshii Spicy Lemongrass Soup Recipe
A flavourful soup with a kick of spice.
Serves:
Ingredients
- 4 cups of vegetable broth
- 2 stalks of lemongrass, bruised
- 1 small red onion, diced
- 4 cloves of garlic, minced
- 1 inch piece of ginger, peeled and chopped
- 1 red chili, chopped
- 1 tbsp of soy sauce
- 1 tbsp of fish sauce
- 1 lime, juiced
- 1 cup of mushrooms, sliced
- 1 cup of baby bok choy, chopped
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions

In a large pot, bring the vegetable broth and lemongrass to a boil.

Reduce the heat and let it simmer for 15 minutes.

Remove the lemongrass and discard.

In a separate pan, sauté the red onion, garlic, ginger and red chili until fragrant.

Add the sautéed vegetables to the pot of broth.

Add the soy sauce, fish sauce and lime juice and let it simmer for 10 minutes.

Add the mushrooms and bok choy and let it cook for another 5 minutes.

Season with salt and pepper to taste and remove from heat.

Serve hot, garnished with fresh cilantro.
