Ingredients

  • 2 cups quinoa
  • 2 cups kale, chopped
  • 2 cups cherry tomatoes, halved
  • 2 cups cucumber, chopped
  • 1 cup red onion, diced
  • 1 can chickpeas, drained and rinsed
  • 1/4 cup kalamata olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook quinoa according to package instructions and set aside.

  2. In a large bowl, combine kale, cherry tomatoes, cucumber, red onion, chickpeas, olives, and crumbled feta cheese.

  3. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper. Pour over the bowl and toss to combine.

  4. Divide the quinoa among 4 bowls and top with the Mediterranean mixture.

  5. Serve and enjoy!
