Ingredients

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 2/3 cup milk
  • 2 cups sliced strawberries
  • 1/4 cup granulated sugar
  • Whipped cream for serving

Instructions

  1. Preheat the oven to 400°F.

  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.

  3. Cut in the butter using a pastry cutter or your fingers until the mixture resembles fine crumbs.

  4. Stir in the milk and mix until a dough forms.

  5. On a lightly floured surface, knead the dough a few times.

  6. Roll out the dough to a 1/2-inch thickness and cut out 8 circles using a biscuit cutter.

  7. Place the circles on a parchment-lined baking sheet and bake for 12-15 minutes or until golden brown.

  8. Meanwhile, mix the sliced strawberries and sugar in a mixing bowl and let sit for 10 minutes.

  9. To serve, split the shortcakes in half and spoon the strawberries and their juices over the bottom halves.

  10. Top with whipped cream and place the other halves of the shortcakes on top.
