Ingredients

  • 1 1/2 cups Aunt Jemima Pancake Mix
  • 1/2 cup canned pumpkin puree
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1 cup water
  • Non-stick cooking spray
  • Maple syrup, for serving

Instructions

  1. In a large bowl, mix together the pancake mix, pumpkin puree, cinnamon, and nutmeg until well combined.

  2. Gradually stir in water until batter is smooth.

  3. Heat a non-stick griddle or pan over medium heat and spray with cooking spray.

  4. Using a 1/4 cup measuring cup, scoop batter onto the griddle or pan.

  5. Cook until the edges start to dry and the surface is bubbly.

  6. Flip and cook until golden brown.

  7. Repeat with remaining batter.

  8. Serve with maple syrup.
