Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 green chilies, slit lengthwise
  • 1 tsp ginger paste
  • 1 tsp garlic paste
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp red chili powder
  • 1 tsp garam masala
  • Salt to taste
  • 2 tbsp vegetable oil
  • Fresh coriander leaves for garnish
  • For Lime & Cucumber Raita:
  • 1 cup plain yogurt
  • 1 small cucumber, peeled and grated
  • Juice of 1 lime
  • Salt to taste
  • 1/2 tsp roasted cumin powder

Instructions

  1. Heat oil in a pan and add the chopped onions. Saute until golden brown.

  2. Add ginger paste and garlic paste. Cook for a minute.

  3. Add tomatoes, green chilies, turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Cook until tomatoes are soft and oil starts to separate.

  4. Add diced potatoes and mix well. Cook for 2-3 minutes.

  5. Add enough water to cover the potatoes and bring it to a boil.

  6. Reduce heat, cover the pan, and simmer until potatoes are cooked through and tender.

  7. Sprinkle garam masala and give it a final mix. Remove from heat.

  8. For the raita, mix together yogurt, grated cucumber, lime juice, salt, and roasted cumin powder in a bowl.

  9. Serve the potato curry hot garnished with fresh coriander leaves, accompanied by lime & cucumber raita.
