How To Make Chicken Legs with Pesto, Butter Beans & Kale

Ingredients

  • 4 chicken legs
  • 4 tbsp of pesto
  • 1 can of butter beans, drained and rinsed
  • 2 cups of kale, chopped
  • 2 tbsp of olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the chicken legs with salt and pepper, then rub each leg with 1 tbsp of pesto.

  3. Heat 1 tbsp of olive oil in a large oven-safe skillet over medium heat. Add the chicken legs and cook for 3-4 minutes on each side, until browned.

  4. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and the juices run clear.

  5. In the meantime, heat the remaining olive oil in a separate pan over medium heat. Add the butter beans and cook for 4-5 minutes, until heated through.

  6. Add the chopped kale to the pan with the beans and cook for an additional 2-3 minutes, until wilted.

  7. Serve the chicken legs on a bed of kale and butter beans, and enjoy!
