- 4 skinless, boneless chicken breasts
- 1/2 cup of crumbled blue cheese
- 1/4 cup of breadcrumbs
- 1/4 cup of grated Parmesan cheese
- 1/2 tsp of garlic powder
- 1/2 tsp of dried thyme
- Salt and pepper to taste
- 2 tbsp of olive oil

Preheat the oven to 375°F (190°C).

In a small bowl, mix together the blue cheese, breadcrumbs, Parmesan cheese, garlic powder, dried thyme, salt, and pepper.

Cut a slit in each chicken breast to create a pocket. Stuff the pocket with the blue cheese mixture.

Heat the olive oil in a large oven-safe skillet over medium heat. Place the stuffed chicken breasts in the skillet and cook for 3-4 minutes on each side until golden brown.
