Ingredients

  • 4 cups of mashed potatoes
  • 1/2 cup of all-purpose flour
  • 2 eggs
  • 1/4 cup of grated Parmesan cheese
  • 2 green onions, finely chopped
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, combine mashed potatoes, flour, eggs, Parmesan cheese, green onions, garlic powder, salt, and black pepper. Mix well.

  2. Shape the mixture into small patties, about 1/4 inch thick.

  3. Heat vegetable oil in a large skillet over medium heat.

  4. Fry the potato pancakes in batches until golden brown, about 3-4 minutes on each side. Add more oil as needed.

  5. Remove the pancakes from the skillet and drain on paper towels to remove excess oil.

  6. Serve hot and crispy.
