  • 2 cups leftover mashed potatoes
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup vegetable oil

Instructions

  1. In a large bowl, beat together eggs, mashed potatoes, flour, Parmesan cheese, garlic powder, salt, and pepper until well combined.

  2. Heat vegetable oil in a large skillet over medium heat.

  3. Drop spoonfuls of the mashed potato mixture into the skillet and flatten with a spatula.

  4. Cook for 3-4 minutes on each side or until golden brown.
