How To Make Louisiana Sweet Potato Pancakes

Serves:

Ingredients

  • 2 cups mashed sweet potatoes
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp Cajun seasoning
  • 2 tbsp brown sugar
  • 1 cup milk
  • 2 eggs
  • 3 tbsp melted butter
  • Cooking oil, for frying
  • Maple syrup, for serving

Instructions

  1. In a mixing bowl, combine mashed sweet potatoes, flour, baking powder, salt, Cajun seasoning, and brown sugar.

  2. In another bowl, whisk together the milk, eggs, and melted butter.

  3. Gradually pour the egg mixture into the sweet potato mixture, stirring until well combined.

  4. Heat a large non-stick skillet or griddle over medium heat and coat with cooking oil.

  5. Drop 1/4 cup of pancake batter onto the skillet and spread it slightly with the back of a spoon to form a round pancake.

  6. Cook until bubbles form on the surface of the pancake, then flip and cook for an additional 2-3 minutes, or until golden brown.

  7. Repeat with the remaining batter.

  8. Serve the sweet potato pancakes warm with maple syrup.
