How To Make Spinach & Tuna Pancakes

Ingredients
- 2 cups spinach, chopped
- 2 cans tuna, drained
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 cup milk
- 2 eggs
- 2 tbsp vegetable oil
Instructions

In a large bowl, mix together the flour, baking powder, salt, and black pepper.

In a separate bowl, whisk together the milk and eggs.

Gradually add the milk and egg mixture to the dry ingredients, stirring until well combined.

Fold in the chopped spinach and drained tuna.

Heat the vegetable oil in a non-stick skillet over medium heat.

Drop spoonfuls of the pancake batter onto the skillet, using about 1/4 cup for each pancake.

Cook the pancakes for 3-4 minutes on one side until golden brown, then flip and cook for an additional 2-3 minutes on the other side.

Serve the spinach and tuna pancakes warm, with your choice of toppings or sauce.
