How To Make Fluffy Canadian Pancakes

Ingredients
- 2 cups all-purpose flour
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 2 large eggs
- 1 1/2 cups milk
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
Instructions

In a large bowl, whisk together the flour, sugar, baking powder, and salt.

In a separate bowl, beat the eggs. Add the milk, melted butter, and vanilla extract. Mix well.

Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix; the batter should be lumpy.

Heat a non-stick skillet or griddle over medium-high heat. Lightly grease with butter or cooking spray.

Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook for another 1-2 minutes, or until golden brown.

Repeat with the remaining batter, adding more butter or cooking spray as needed.

Serve the pancakes warm with your favorite toppings, such as maple syrup, fresh berries, or whipped cream.
