Ingredients

  • 4 salmon fillets
  • 3 cloves of garlic, minced
  • Juice of 1 lemon
  • 1 cup of spinach
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. Season the salmon fillets with salt and pepper on both sides.

  3. Heat olive oil in a large oven-safe skillet over medium-high heat.

  4. Place the salmon fillets skin side down in the skillet and cook for 3-4 minutes until the skin is crispy.

  5. Flip the fillets and add the minced garlic to the skillet. Cook for another 2 minutes until the garlic is fragrant.

  6. Pour in the lemon juice and add the spinach. Stir until the spinach wilts.

  7. Reduce the heat to medium-low and pour in the heavy cream. Simmer for 2-3 minutes until the sauce thickens slightly.

  8. Transfer the skillet to the preheated oven and bake for 10-12 minutes until the salmon is cooked through and flakes easily with a fork.

  9. Serve the creamy garlic, lemon & spinach salmon hot with your favorite side dishes.
