How To Make Beef Sausage and Quinoa Stuffed Peppers Recipe
Bell peppers stuffed with delicious beef sausage and quinoa mix.
Serves:
Ingredients
- 4 bell peppers, halved and seeded
- 1 lb beef sausage
- 1 cup cooked quinoa
- 1/2 onion, diced
- 2 cloves garlic, minced
- 1/2 cup tomato sauce
- 1 tbsp olive oil
- 1 tsp paprika
- Salt and pepper to taste
- Optional toppings: shredded cheese, chopped parsley
Instructions

Preheat oven to 375°F.

In a skillet, heat olive oil over medium-high heat. Add beef sausage and cook until browned.

Add onion and garlic to the skillet and cook until tender.

Stir in cooked quinoa, tomato sauce, paprika, salt, and pepper.

Stuff each bell pepper half with the beef sausage and quinoa mixture.

Place stuffed peppers on a baking sheet and cover with foil.

Bake for 35-40 minutes or until peppers are tender.

Remove foil and sprinkle shredded cheese on top of the peppers.

Bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.

Serve hot, garnished with chopped parsley if desired.
