Serves:

Ingredients

  • 1 lb beef sausage, sliced
  • 1 cup medium-grain rice
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 green bell pepper, diced
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • Chopped parsley, for garnish

Instructions

  1. Preheat oven to 350°F (175°C).

  2. In a large skillet, brown the beef sausage over medium heat for 5-7 minutes.

  3. Add diced onion, garlic, and bell pepper and sauté for another 5 minutes.

  4. Add rice, diced tomatoes, chicken broth, paprika, cumin, salt, and pepper and stir well.

  5. Pour the rice mixture into a 9×13 inch casserole dish and cover with foil.

  6. Bake for 45 minutes, remove the foil and bake for another 15 minutes.

  7. Let cool for a few minutes before serving and garnish with chopped parsley.
