How To Make Clean Eating Quinoa-Stuffed Peppers Recipe
These stuffed peppers are filled with nutrient-dense quinoa and fresh veggies, making it a delicious and healthy meal!

Ingredients
- 4 bell peppers (any color)
- 1 cup of quinoa, cooked
- 1 small onion, chopped
- 2 garlic cloves, minced
- 1 zucchini, chopped
- 1 cup of spinach, chopped
- 1/2 tsp of dried oregano
- Salt and pepper, to taste
- 1/4 cup of parmesan cheese (optional)
Instructions

Preheat your oven to 350°F.

Cut off the tops of your peppers and remove the seeds and core.

In a large skillet, sauté the onion and garlic until fragrant.

Add in the chopped zucchini and spinach, and cook until the veggies are slightly softened.

Stir in the cooked quinoa and herbs, salt, and pepper.

Stuff the peppers with the quinoa mixture, and top each with some parmesan cheese.

Place the peppers into a baking dish, and bake until the peppers are tender and the cheese is melted (around 30-35 minutes).
