How To Make Sausage-Stuffed Acorn Squash Recipe

Ingredients

  • 2 acorn squash, halved and seeds removed
  • 1 lb sausage, casings removed
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 cup cooked quinoa
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped parsley
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Place the acorn squash halves cut-side down in a baking dish and add a little water to the bottom of the dish. Bake for 25 minutes until slightly tender.

  3. In a skillet, cook the sausage, onion, bell pepper, and garlic over medium heat until the sausage is browned and the vegetables are softened. Drain any excess grease.

  4. Remove the acorn squash from the oven and flip them over. Fill each squash half with the cooked sausage mixture, dividing it evenly.

  5. Top each squash half with cooked quinoa, shredded cheddar cheese, and chopped parsley.

  6. Return the stuffed squash to the oven and bake for an additional 20 minutes until the squash is tender and the cheese is melted and bubbly.

  7. Serve hot and enjoy!
