  • 4 bell peppers, tops sliced off and seeds removed
  • 1 lb breakfast sausage
  • 6 eggs
  • 1/4 cup whole milk
  • 1/2 cup shredded cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat oven to 375°F.

  2. Brown breakfast sausage in a large skillet over medium heat.

  3. In a mixing bowl, whisk eggs, milk, cheddar cheese, salt, and pepper.

  4. Fill each bell pepper with cooked sausage, and pour in egg mixture.

  5. Place stuffed peppers on a baking sheet and bake for 35 minutes.

  6. Let the peppers cool for a few minutes before serving.
