How To Make White Bean Soup Recipe

  • 2 cans of white beans, drained and rinsed
  • 2 cups of vegetable broth
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 tsp of dried thyme
  • Salt and pepper to taste
  • 2 tbsp of olive oil
  • Chopped fresh parsley, for topping (optional)


  1. In a large pot, heat olive oil over medium heat.

  2. Add onion and garlic, and cook until softened, about 5 minutes.

  3. Add the drained and rinsed white beans, thyme, and vegetable broth.

  4. Simmer for 20-25 minutes, or until the flavors have melded together.

  5. Season with salt and pepper to taste.

  6. Use an immersion blender or transfer to a high-speed blender to purée until smooth.

  7. Serve hot with chopped fresh parsley (optional).
