How To Make White Bean and Vegetable Curry Recipe

A flavorful and nutritious vegetarian curry with white beans and vegetables in a creamy coconut sauce.

  • 1 tbsp oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 tbsp ginger, grated
  • 2 tsp curry powder
  • 1 tsp cumin
  • 1 tsp coriander
  • 1/2 tsp turmeric
  • 1/4 tsp cayenne pepper
  • 1 can of diced tomatoes (14.5 oz)
  • 1 can of coconut milk (13.5 oz)
  • 1 can of white beans, drained and rinsed (15 oz)
  • 2 cups of mixed vegetables (carrots, bell peppers, zucchini, etc.)
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish


  1. In a large pot or Dutch oven, heat the oil over medium heat.

  2. Add the onion, garlic, and ginger and cook until softened, about 5 minutes.

  3. Add the curry powder, cumin, coriander, turmeric, and cayenne pepper and cook for another minute until fragrant.

  4. Add the diced tomatoes and coconut milk and bring to a simmer.

  5. Add the white beans and mixed vegetables and simmer for 10-15 minutes until the vegetables are cooked and the sauce has thickened.

  6. Season with salt and pepper to taste.

  7. Serve over rice or with naan bread and garnish with fresh cilantro.
