  • 2 cans (15 oz) white beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 small red onion, chopped
  • 1 cup cherry tomatoes, halved
  • 1/3 cup chopped fresh parsley
  • 1/4 cup chopped fresh basil
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the white beans, red bell pepper, red onion, cherry tomatoes, parsley, and basil.

  2. In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  3. Pour the dressing over the salad and toss gently to coat.
