Ingredients

  • 2 cans (15 oz) white beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 cup vegetable broth
  • 1/2 cup heavy cream
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 375°F.

  2. Heat olive oil in a large skillet over medium heat. Add onion, garlic, carrots, and celery, and cook until vegetables are softened.

  3. Add drained white beans, thyme, salt, and pepper to the skillet and stir to combine.

  4. Transfer the mixture to a 9×13-inch baking dish.

  5. In a small saucepan, heat vegetable broth and heavy cream until thickened, stirring constantly.

  6. Pour the sauce over the white bean mixture in the baking dish.

  7. Bake for 30-40 minutes, until bubbly and golden brown on top.
