Total: 45 minutes

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup quinoa, rinsed
  • 1 can (14.5 oz) diced tomatoes
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 2 cups low-sodium vegetable broth
  • Salt and pepper, to taste

  1. Heat the oil in a large pot over medium heat. Add the onion and garlic and sauté for 2-3 minutes, until onion is translucent.

  3. Stir in the quinoa, diced tomatoes, white beans, and vegetable broth. Bring to a boil, reduce heat, and simmer for 20-25 minutes, until chili is thickened and quinoa is cooked.

  4. Season with salt and pepper to taste. Serve hot, topped with cheese, cilantro, and/or sour cream if desired.
