White Bean and Chicken Chili Recipe

How To Make White Bean and Chicken Chili Recipe

A comforting, hearty chili with tender chicken and creamy white beans.

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp dried oregano
  • 1/4 tsp cayenne pepper
  • Salt and pepper, to taste
  • 2 cups chicken broth
  • 2 cans white beans, drained and rinsed
  • 1 can diced tomatoes with green chilies
  • 1/4 cup chopped fresh cilantro


  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the onion and garlic and cook until soft, about 5 minutes.

  2. Add the chicken to the pot and cook until browned, about 5 minutes.

  3. Add the cumin, chili powder, oregano, cayenne pepper, salt, and pepper to the pot and stir to combine.

  4. Pour in the chicken broth, beans, and diced tomatoes and bring to a simmer.

  5. Reduce the heat to low and let the chili simmer for 30-40 minutes, stirring occasionally, until the chicken is cooked through and the flavors have melded together.

  6. Stir in the cilantro and serve hot with your favorite chili toppings.
